Project: Japanese bread buns

Recipe with the word 'Japanese' in the title makes me exciting and Sonia's recipe 'Japanese Sandwich Buns' trigged that too. That and Japanese style of bread is often really tasty and super soft and I happen to eat it a lot when I'm back in Asia or China Town for that matter so I was exciting too to try out Sonia's recipe. I've also giving my own twist to it by adding a flavor: black sesame! Not only does it give flavour but also a nice warm gray color!

Recepten met het woordje 'Japans' in de titel maken mijn leven extra boeiend en hier is een van de originele recepten die het mij boeiden: Sonia's Japanse Sandwich Broodje. Japans brood zijn daarnaast vaak typerend qua smaak en textuur - zo zacht! In Azië eet ik ze graag of in een willekeurige China Town. Ik probeerde dus daarom Sonia's recept uit en voegde mijn eigenheid toe door een smaakje aan toe te voegen: zwarte sesam! Niet alleen geeft het een smaakje maar ook een mooie warme grijze kleur!

The Recipe
350gr bread/all purpose flour
45gr cake flour
1¼ tsp. dry yeast
pinch of salt
2 tbsp. honey
25gr black sesame powder
150ml fresh cold milk
105ml water (lukewarm)
30gr butter (room temp.)+ extra 50gr for the filling  
Attempting making cute food too even though these hippos didn`t turned out perfectly. Still cute and yum!

Salty butter filling will melt and absorb in the dough while baking and once baked and you bite into the center, o boy! Not a boring bread bun I guarantee you.
The Steps
1.In a large bowl add all the ingredient except the butter. I personally add all the dry ingredients first and secondly the wet ones after. Mix, combine and eventually knead (10 min.) everything until a smooth and elastic bread dough.
2. Add the butter and knead once again until a smooth dough for another 10 min.
3. It`s rising time: cover the dough with clingwrap and let it rise for 1 hour until the dough doubled in sizes.
4. Meanwhile make the filling: combine 50gr butter + ¼ tbsp. salt together.
5. After an hour of rising release the air/gas inside the dough by giving a good kneading to it. Divide the dough into 10-12 portions, shame them into balls and place them on a greased plate/baking tin, cover and let it rest for 10 min.
6. Flatten each portions and place a teaspoon of the prepared filling in the center and seal the dough by pressing the edges together. Let the dough balls rise again for 30 min. before baking. Preheat oven to 200C degrees.
7. Baking time!
It is optional but you may apply milk on top of the buns to create a nice brown gloss but you can leave it too. Bake the buns in the preheated oven for around 20 min or until golden brown.
