Project: Raspberry Coffee Cake

Last week I baked a cake for Fathers Day and it was a raspberry coffee cake with cream. I saw we had fresh raspberries in the fridge which is rare to have them fresh and I’ve decided to take advantage of it and use them in my baking!

It was unfortunately not enough to make a tart filled with these berries on top because I had to throw some of the moldy berries away, but it was enough for a coffee raspberry cake! With a slight hint of cinnamon because I believe that coffee and cinnamon are match for each other.

Vorige week heb ik een cake gebakken voor Vaderdag en het was een frambozen koffie cake met slagroom geworden. Ik zag dat we verse frambozen in de koelkast hadden en dat is vrij zeldzaam. Ik besloot dus gebruik te maken van deze verse vruchten en in mijn baksels te doen.

Het was helaas niet genoeg om een taart met deze vruchten helemaal te bekleden bovenop want ik moest een aantal van de beschimmelde framboosjes weggooien, maar het was gelukkig genoeg voor een koffie frambozencake! Met een zweem van kaneel, want kaneel en koffie is zo lekker samen!

The Recipe
cake:
3 eggs
160 gr soft butter + extra for greasing
¼ cup sugar
220 gr self raising flour
1 tbsp. strong brewed coffee
1 tsp. ground coffee + cinnamon powder

topping:
150 ml cream
2 tbsp. sugar
1 box of fresh raspberries

The butter reminds me of the Sydney Opera House!







The Steps:
  1. Pre-heat oven to 190ºC and line and grease a cake pan with baking paper. 
  2. Beat and mix all the cake ingredient in a large bowl until smooth and well combined.
  3. Pour the cake batter in the prepared cake pan and bake for about 25 minute in the oven.
  4. Let the cake cool inside the cake pan for 5 minute then remove to cool down completely.
  5. Meanwhile, prepare the topping! Beat the cream and the sugar in a bowl for about 1-1,5 min until thicken.
  6. Spread the cream on top of the cake with a palette knife, sprinkle some cinnamon powder on top and finally place the fresh raspberries.
